From the 6th floor, guests enjoy wide views of the city by day and a dramatic night skyline after sunset.
Our focus is simple and direct:
fresh seafood from Hokuriku, carefully selected Wagyu, and seasonal local produce — all brought together in a single omakase experience.
Here, sushi is not a side dish.Wagyu is not an addition.Local ingredients are not decoration.

HAKUは金沢駅前すぐ、フォーラス6階にあるカウンター和食店です。昼は開放的な景色を、夜は街の灯りを一望しながらお食事をお楽しみいただけます。北陸の新鮮な魚介、厳選した和牛、そして石川県の旬野菜。それらを一つのおまかせコースに集約しています。

Every seat at HAKU is a counter seat.Each dish is completed directly in front of you and served immediately — at the moment it tastes best.
This is not a buffet-style experience.This is not a casual dining floor.

Our omakase course is designed as a full flow —
from delicate seasonal seafood to sushi, Wagyu shabu-shabu, tempura, and traditional Japanese preparations.
Nothing is rushed.Nothing is pre-plated in the back.Everything happens within sight.

料理は目の前で仕上げ、最良のタイミングで直接お出しします。大量調理でもなく、奥で作られた料理でもありません。
包丁の動き、火入れ、盛り付け。その距離感こそがこの店の設計です。
コースは、旬魚から始まり、寿司、和牛しゃぶしゃぶ、天ぷら、伝統的な一品へと流れます。すべてが見える場所で進みます。

地元出身のスタッフと、寿司や和食を長く磨いてきた職人たちが中心となって運営しています。ここが1号店であり、本店です。大量展開のための店ではなく、一席一席を大切にするための店。人数は多くありません。その分、集中しています。

Sake Pairing and a Private Tea Room.The interior is designed to feel open and elevated — closer to a boutique hotel lounge than a typical shopping complex restaurant.With only 30 counter seats in a large floor plan, the space feels calm and intentional.At night, the city lights become part of the atmosphere.During the day, natural light fills the room.
Our certified sake sommelier curates pairings from carefully selected Japanese breweries, focusing on balance with the omakase course.
We also feature a private tea room space for a more intimate setting.

60坪の空間に、カウンター30席のみ。商業施設内でありながら、ブティックホテルのような静かな空間を目指しました。夜は夜景が料理とともに広がり、昼は自然光が店内を満たします。利酒師が在籍し、コースに合わせた日本酒をご提案します。さらに、茶室の空間もご用意しています。単なる食事ではなく、金沢での時間そのものを体験していただく場所です。
